Bowness restaurant BAHA is known for its legendary umami flavours and vibrant dishes.
Especially with regards to Pacific Rim street food. And this lockdown, we’ve been busy getting to know the man behind the  hot robata coals!

Below, our Senior Sous Chef Ian Hamilton, shares his foodie favourites and his take on our menu!

“I was a Naval chef for 12 years or so. Then I began working in a few restaurants in the southwest, before moving to the Lake District a couple of years back. I’ve since been at Bowness Restaurant Baha ever since!”

What is your favourite dish
on our menu?

Well, I actually have two favourite dishes from the menu:
Hawkers market-style Chicken Wings and also a dish that is a twist on Pollo a la Brasa which is Peruvian Spatchcock Poussin (small chicken).

We use the robata instead of roasting the chicken. It’s insane!
For these dishes it’s all about the marinades, you’ve got to try them.

What’s 1 thing you love to cook
on a BBQ or robata? 

 I have done a lot of BBQing over the years.
I love to rock up at a lake and bbq!

It has to be chicken for me as I think it’s one of the most versatile meats you can cook on BBQ.  You can have a great play with spices and marinades and change the flavour each time you cook it.
It’s just so much fun.

 

What are your favourite foods or spices that you love to use in the kitchen?

Lol, I actually find this question hard as I can rave about most types of food! (I get really excited about food)

It really depends on the mood I am in with regards to the type of food I want to eat. However, I mainly eat vegetarian at home.
I do always try to have fresh coriander in my home!

 

If you could visit one place in the
Pacific Rim, where would it be?

 I have always wanted to travel across the Andes in Peru!

 

What’s your go-to for a Friday night in or takeaway?

 If I am looking to make myself a quick take away meal, it has to be noodles (I always have some presoaked noodles kicking around my fridge) I add them to some veggies and a blend of Asian sauces, and of course lots of ginger and garlic.

“I tend not to watch TV. But I do read a lot of cookbooks. The last book I bought was American Sfoglino by Evan Funke. This guy is an absolute master at pasta and he does it all by hand!”

“Nice and simple, taste and season properly. I love the magic of salt!”
